Family Table: Daddy Cakes

This week we talk about celebrating our kids. One way Noah does this is to make their birthday cakes special. It started with a melting fire truck attempt (top left in gallery below) and has expanded in levels of difficulty throughout the years.

Noah encourages all dads to join him at Daddy Cakes and step up to and try making their birthday cake special. You really can’t do anything wrong it all eats the same in the end!

The best icing to use is the Wilton recipe which is as follows:

  • ½ cup vegetable shortening (Crisco) solid

  • ½ cup (1 stick) butter or margarine softened

  • 1 teaspoon clear vanilla extract (No big deal if you don’t have clear, it will just tint it a smidge dark)

  • 4 cups powdered sugar (approximately 1 lb.)

  • 2 tablespoons milk

Begin with shortening and butter in large bowl and add the powdered sugar. Before turning the hand held mixer up, with the beaters in, try to mash the butter and crisco up to break it apart from its original form. Then turn the mixer on and add the vanilla and milk. DON’T OVERDO THE MILK! If you do it will become too runny and you will have to add more powdered sugar.

Once the icing is a smooth consistency, divide up into bowls if you are going to used multiple colors. Remember to leave some white if you plan do do some writing in white. Then add either food coloring or Wilton Color Gel until the desired color is achieved.
