This is the fourth video in a series on how to process pigs on your homestead.
In this video we cut halved pig into primals (Ham, Loin, Belly, Shoulder). We cut chops out the the loin and set the belly aside for bacon (Part 5). Our plan is to ground as much pork for ground pork and sausage as possible, so we are cutting a cutting party to cube up the shoulders and hams. The theme for today was definitely, "It'll grind!"
