Farm fresh eggs are some of the most versatile ingredient you can have in your pantry. Notice I didn’t necessarily say your fridge? Unwashed eggs have a protective layer called a cuticle (also referred to as the bloom) and can be stored on the counter for several weeks. This protective coating works by sealing the shell's pores and preventing air from penetrating it, helping to keep bacteria out. Farm fresh eggs are best when they are washed right before use. If you decide to wash your eggs daily, that is fine, but they then need to be stored in the refrigerator and used within 7-10 days.
